I have been craving this healthy and delicious cucumber, tomato and avocado salad since the summer started.
Ingredients:
Salad
1/2 cup cooked quinoa
1 chopped cucumber (peeled)
1/2 red onion chopped
Cherry tomatoes, halved
1/4 avocado, chopped
Salt and pepper to taste
Dressing
1 tsp olive oil
1 Tb red wine vinegar
1 squirt spicy mustard
Combine salad ingredients in a bowl. Whisk dressing together, add to salad and toss.
I recommend adding your favorite protein (such as grilled chicken) to this salad to make it a complete meal.
