With the temperatures getting a little cooler, this recipe is perfect for Fall. I can't wait to start making more healthy and hearty one pot recipes. This one is SO delicious and packed with nutrition.
Ingredients:
2 tsp olive oil
1 cup chopped onion
2 red bell peppers, chopped
4 cloves minced garlic
1 tsp chili powder
1 can (14 oz) fire-roasted diced tomatoes
1 small sweet potato, chopped
1 Tbsp minced canned chipotle in adobo sauce
1 can (15 oz) black beans, rinsed and drained
Optional: Chopped fresh cilantro
Method:
Heat oil is large pot over medium heat. Add onion and cook, stirring occasionally, for 5 mins.
Add bell peppers, garlic and chili powder and cook 2 mins.
Stir in tomatoes, sweet potato and chipotle pepper. Bring to a boil, then reduce heat to medium-low. Cover and cook 15 minutes.
Stir in black beans. Cover and cook 8-10 mins or until vegetables are tender. Chili will be thick, so use water to thin as desired.
Top will cilantro and serve.
