I have seriously been craving comfort foods lately, so this easy, healthy and delicious soup recipe hits the spot. I love that it's ready in under 30 mins, and that there are only a handful of ingredients. Simple recipes always end up making the best dishes in my opinion, and this is one that won't disappoint. Plus, at around 100 calories per serving, this one is super figure-friendly too.
Ingredients:
1 tsp olive oil
3 sweet onions
5 sprigs fresh thyme
1 (32 oz) box of organic, reduced sodium beed broth (substitute veggie broth for vegetarian/vegan option)
Heat oil in a large pot over medium-high heat. Add onions and thyme. Cover a cook for 20 minutes, stirring occasionally to get brown bits off the bottom of the pan. Stir in broth and simmer for 4 minutes. Remove and discard the thyme sprigs.
Yields 4 servings (1 1/4 Cup)
